This particular cut is characterized by its tender texture and generous marbling, which imparts a rich and savoury taste. It is commonly referred to as a bone-in rib roast and is essentially a ribeye steak with the back rib still attached. The muscles in this section of the cow lend themselves to creating a succulent and moist prime rib.

Ensure the roast is at room temperature before cooking. You can sear it at high heat and then cook it in the oven at a lower heat. Use a rub to spread over it, or make small slits and place whole garlic bulbs. Having carrots and onions on the bottom of the pan adds more flavour. Follow the cooking directions carefully, and use a meat thermometer not to overcook. Serve with the gravy “au jus” or white horseradish.
