This is a tender piece with a lot of marbling, which makes it juicy and flavourful. It is the ribeye, but with the back rib left on. The muscles in this part of the cow make the meat of a prime rib soft and moist. They are also known as bone-in rib roasts.

BEST USES:

Ensure the roast is at room temperature before cooking. You can sear it first at high heat and then cook it in the oven at a lower heat. Use a rub to spread over it, or make small slits and place whole garlic bulbs. Having carrots and onions on the bottom of the pan adds more flavour. Follow the cooking directions carefully, and use a meat thermometer not to overcook. Serve with the gravy “au jus” or white horseradish.
